People of Eagle
Meet Georgia Ann Reynoldson
I have decided to start a new section in the Eagle Newsletter each week. It will be featuring a person in our community. I feel like sometimes we can get so stuck in our own world that we don't get to know the people that we see every day. You know how I feel about volunteers and small business owners so I am sure I will be featuring several of those but there are no "special" qualifications to be featured. I want us all to get to know our neighbors.

I have lived in the Eagle area for 67 years! Married to my husband Ron for 51 years. Raised my family here 2 sons, Ryan and Tony, and 1 daughter, Gina. Blessed with 3 stepsons and a total of 20 grandchildren and 6 great grandchildren. Worked at Goodyear for 37 years until retirement then worked at a couple fabric stores and a scrapbook store in Lincoln ( just for fun)
Opened a photography business in Eagle, Photos By GeoAnn, and still love taking photos.
Hobbies include photography, scrapbooking, eating with friends and anything involving my family!
I have done volunteer work for several organizations in Eagle during my lifetime!
4-H leader,
Sunday school teacher and church committees,
founder and chairman of Alvo/Eagle Rec for 17 years,
softball coach,
wrote articles and took photos for Eagle Newspapers,
served on several committees...Eagle Days, Legion Auxiliary, Girl Scouts, Eagle Park, school volunteer, if there was a committee I was probably on it!
Director of Eagle Food Pantry.
I like to keep busy and help others and usually always have a camera in my hand!
*I need your help...If you know of someone in our amazing community that should be featured please email me at editor@eaglenebraska.com so I can reach out to them. TIA!

TURKEY SAUSAGE
My husband and I discovered this recipe on www.divascancook.com a year or so ago and I refuse to purchase store bought ever again! When my family is eating it I omit the cayanne and red pepper flakes. If you like it spicy you can choose to add a bit more. We have never made the sausage the way she recommends. We typically broil them or make them in our George Foreman grill. We have made a bunch of these during meal prep and used them for breakfast sandwiches when we are rushing to get out the door in the mornings. They freeze well.
INGREDIENTS:
- 1 lb ground turkey
- 1 1/2 tsp seasoning salt or smoked salt
- 1 1/2 tsp black pepper
- 1/2 tsp garlic powder
- pinch of clove
- pinch of red pepper flakes
- pinch of cayenne (optional)
- 1 tsp sage
- 1/2 tbsp brown sugar (can use more)
- 1/2 - 1 tsp fennel seed (these are pretty strong
- 1 tsp thyme
- 1 tbsp olive oil (optional)
- butter and olive oil for frying
DIRECTIONS:
- Place ground turkey in a large bowl, set aside.
- Mix together spices.
- Add spices to ground turkey and mix until spices are evenly distributed throughout the meat
- Mix in olive oil if using (this will add extra moisture)
- Shape turkey sausage into small patties
- Fry up a small test patty to test out the seasionings. Adjust the seasing if needed.
- Refrigerate overnight.
- Heat a bit of olive oil and butter in a large skillet on medium heat.
- Place sausages into the hot skillet and cook unilt browned and the middle is no longer pink.
- Cooking time will vary based on the thickness of the patty.
- Be careful not to overcook or the sausages will be dry in texture.
- Let the sausages drain onto paper towels.
- Serve or freeze.
