Meet Kathy Largent
I have decided to start a new section in the Eagle Newsletter each week. It will be featuring a person in our community. I feel like sometimes we can get so stuck in our own world that we don't get to know the people that we see every day. You know how I feel about volunteers and small business owners so I am sure I will be featuring several of those but there are no "special" qualifications to be featured. I want us all to get to know our neighbors.
My name is Kathy Largent. I was married to Randy Largent for 47 years. Randy past away 4 years ago. We were both from small towns. I grew up on a dairy farm in southeast Nebraska. We moved to Eagle in 1969. Life was good when you could buy a house for 12G and house payments were only $75 a month. I remember the town when we moved to Eagle. Grocery store was were the bank is now. Lunar Bar was in middle of the block. Another bar where the post office is now. Had weekly fish fries and mountain oyster fries all year around ! At some point the bar burnt down and I think the lumber yard also burnt down. Changes to main street progressed over the years. We had one daughter, Angela and 3 grandsons. Soon I will be a great grandma to a girl named Ophelia. My daughter and grandkids all live in Tampa FL. So I make lots of trips there.
My hobbies over the years were softball and volleyball. I played in leagues until I was 48. Time to quit before I got hurt. In my years now, I like working in my yard. I have a small acreage north of town. I live in a house built in the 1910-1912. I was told by a previous owner that my house initially was a hotel. At some point it became a plantation house.
In our earlier years in Eagle my husband, who had a steel fabrication business tried to do what he could to give towards the community. We sponsored teams in softball\baseball. During the first years of Eagle Daze, we volunteered in helping with events and security.
I can't think of anything that's very unique of me. I started my working career at Nebraska Department of Transportation in Computer Systems in 1966. I worked in that same division for 50 years. Now retired, but enjoyed going to work every day of those 50 years. I'm sure there were a few days I wanted to stay home !! I enjoy simple lifestyle. Family and friends are always a priority in my life.

Seeking Applicants for the Eagle Parks & Recreation Commission
Do you have an interest in parks and outdoor recreational facilities? Do you have ideas of new equipment or facilities for our local park?
The Village of Eagle is currently seeking applicants for appointment to the Parks & Recreation Commission.

Old Fashioned Easy Apple Crisp
Ingredients:
- 6 golden delicious apples, peeled and chopped (other varieties can be used, can also be sliced)
- 2 Tbsp granulated sugar
- 1 3/4 tsp ground cinnamon, divided
- 1 1/2 tsp lemon juice
- 1 cup light brown sugar
- 3/4 cup old fashioned oats
- 3/4 cup all-purpose flour
- 1/2 cup cold unsalted butter, diced into small cubes
- pinch of kosher salt
Directions:

Preheat oven to 350 F degrees. Butter an 8x8 baking dish, or spray with non-stick cooking spray. Set aside.

In a mixing bowl, add chopped apples, granulated sugar, 3/4 tsp of the cinnamon and lemon juice. Stir to combine, then transfer to prepared baking dish.

In a separate mixing bowl, add topping ingredients (brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter). Use a pastry cutter to cut the butter into the oat mixture, using a slight downward twisting motion, until mixture resembled pea-sized crumbs. Alternatively, you can use two forks or even your hands to cut butter into the mixture.

Spread topping over apples in baking dish, and gently pat to even it out. Bake 40-50 minutes, until golden brown and bubbly.

Serve warm and enjoy!
