People of Eagle 
Meet Courtney Beckstead
I have decided to start a new section in the Eagle Newsletter each week. It will be featuring a person in our community. I feel like sometimes we can get so stuck in our own world that we don't get to know the people that we see every day. You know how I feel about volunteers and small business owners so I am sure I will be featuring several of those but there are no "special" qualifications to be featured. I want us all to get to know our neighbors.

I've lived in Eagle 15yrs of my life. Some of my hobbies are, Art, collecting any form of Taylor Swift as well as penguin items.
I help the volunteer helping the community on Eagle Days, church events, things at the elementary school when they need volunteers.
One unique thing about me is i won the eagle days art contest two years in a row, and my cat's name is penguin.

Eagle Vision meetings are held the first Thursday of every month in the Bailey's Local basement.

Seeking Applicants for the Eagle Parks & Recreation Commission
Do you have an interest in parks and outdoor recreational facilities? Do you have ideas of new equipment or facilities for our local park?
The Village of Eagle is currently seeking applicants for appointment to the Parks & Recreation Commission.

Old Fashioned Easy Apple Crisp
Ingredients:
- 6 golden delicious apples, peeled and chopped (other varieties can be used, can also be sliced)
- 2 Tbsp granulated sugar
- 1 3/4 tsp ground cinnamon, divided
- 1 1/2 tsp lemon juice
- 1 cup light brown sugar
- 3/4 cup old fashioned oats
- 3/4 cup all-purpose flour
- 1/2 cup cold unsalted butter, diced into small cubes
- pinch of kosher salt
Directions:

Preheat oven to 350 F degrees. Butter an 8x8 baking dish, or spray with non-stick cooking spray. Set aside.

In a mixing bowl, add chopped apples, granulated sugar, 3/4 tsp of the cinnamon and lemon juice. Stir to combine, then transfer to prepared baking dish.

In a separate mixing bowl, add topping ingredients (brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter). Use a pastry cutter to cut the butter into the oat mixture, using a slight downward twisting motion, until mixture resembled pea-sized crumbs. Alternatively, you can use two forks or even your hands to cut butter into the mixture.

Spread topping over apples in baking dish, and gently pat to even it out. Bake 40-50 minutes, until golden brown and bubbly.

Serve warm and enjoy!
