Meet Jake Metz
I have decided to start a new section in the Eagle Newsletter each week. It will be featuring a person in our community. I feel like sometimes we can get so stuck in our own world that we don't get to know the people that we see every day. You know how I feel about volunteers and small business owners so I am sure I will be featuring several of those but there are no "special" qualifications to be featured. I want us all to get to know our neighbors.

Hi, I'm Jake Metz. I’m 27 years old. Married with 2 amazing, beautiful daughters (ages 6 and 3). We’ve lived in Eagle for almost 3-1/2 years now and love it more than any of the 9 towns I’ve lived in throughout Nebraska, in my life.
I enjoy spending every spare minute that I’m not working, with the people I care for (mostly my gorgeous wife, Brittany, and 2 inquisitive, young daughters, Lilly & Amelia). We especially enjoy the Omaha Henry Doorly Zoo, the Wildlife Safari, the Joslyn Art Museum, ... and the Eagle Park! Aside from this, lately my hobbies have been solely expanding and improving my company, Jake’s Odd Jobs, Inc. which offers concrete services, remodeling/handyman services, property maintenance & lawn services/ and snow removal services (as well as all sorts of other “odd jobs”, as the name implies).
I opened my business August 1st, 2018 and since then I’ve completed over 350 projects for over 130 customers (it’s been a busy year..). I pride myself on great, quality work and a fun/easy/honest/and convenient project process for all of my customers. I love word of mouth referrals, so I do my best to make customers happy and keep that word of mouth going.
I do have some samples of my work on my facebook page, Jake’s Odd Jobs, Inc., and my website, www.jakesoddjobs.com, if anyone is interested in taking a look.
Prior to opening my concrete/construction/property maintenance & lawn services/snow removal company, I worked in the communication center at the Lincoln Police Department for 3 years, as well as a few incredible general contractors throughout the great state of Nebraska (I went to a few different colleges and was drawn to the construction field in each new town). I’ve also spent some time working at a grocery store, hardware store, and a package delivery role.
Pertaining to volunteering for the community - I’d like to be more involved with Village of Eagle going ons, but sadly haven’t found that opportunity quite yet. I have donated concrete pads to the Branched Oak Observatory near Raymond, NE to give them a level platform set down and dial in their standing telescopes! If there’s any ideas of ways we can get more involved as a family, please let me know!
I do hope to become more involved in the community this spring, when I plan on hiring 1-2 full time employees (preferably from the Eagle area).
I’d also like to send a big thank you to Eagle Elementary and all of the teachers and staff that do such an amazing job of caring for and teaching my children. Thank you!

Seeking Applicants for the Eagle Parks & Recreation Commission

Pumpkin Pie Muffin
Ingredients
1 sheet refrigerated pie crust
1 can (15 ounces) solid-pack pumpkin
4 large eggs, room temperature
1/2 cup canola oil
1/2 cup water
2 teaspoons vanilla extract
3 cups all-purpose flour
2 cups sugar
1 tablespoon cornstarch
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
1/2 teaspoon salt
WHIPPED CREAM:
2 cups heavy whipping cream
1/2 cup confectioners' sugar
Ground cinnamon
Directions
Preheat oven to 350°. Line 24 muffin cups with foil liners.
On a work surface, unroll crust. Cut 24 circles with a floured 2-1/4-in. round cookie cutter, rerolling scraps as necessary. Press one crust circle into each liner. Bake until lightly browned, 10-12 minutes. Cool on wire racks.
In a large bowl, beat pumpkin, eggs, oil, water and vanilla until well blended. In another bowl, whisk flour, sugar, cornstarch, baking powder, baking soda, pie spice and salt; gradually beat into pumpkin mixture. Pour 1/4 cup batter into each prepared cup.
Bake until a toothpick inserted in center comes out clean, 20-25 minutes, rotating pans halfway through baking. Cool in pans 10 minutes before removing to wire racks to cool completely.
For whipped cream, in a large bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until soft peaks form. To serve, dollop over cupcakes; sprinkle with cinnamon.
Nutrition Facts
1 cupcake: 297 calories, 15g fat (6g saturated fat), 60mg cholesterol, 185mg sodium, 37g carbohydrate (21g sugars, 1g fiber), 4g protein.

I want to introduce you to Coco Salon's newest stylist, Laura Cartwright.
She is a native of Lincoln, NE and prior to working at CoCo's salon she managed a salon in Lincoln for 7 years. Laura has known Coco for many years so when the opportunity presented itself to work with her out here in Eagle she was excited to jump at the opportunity. She has been doing hair for 15 years. She specializes in haircuts, colors, and waxing.
