Meet Mary Gerteisen
I have decided to start a new section in the Eagle Newsletter each week. It will be featuring a person in our community. I feel like sometimes we can get so stuck in our own world that we don't get to know the people that we see every day. You know how I feel about volunteers and small business owners so I am sure I will be featuring several of those but there are no "special" qualifications to be featured. I want us all to get to know our neighbors.

I have lived in Eagle for almost 33 years. I retired from Ameritas Life Insurance in August of 2017. I started my tas business, Mary's Tax Service, in 1998 on a part-time basis and moved to full-time when I retired from Ameritas. I have expanded to include processing payrolls for many companies, and was able to hire my daughter, Mysi Girdlestone, and my grand-daughter, Courtney Beckstead, to help with the tax preparation, payrolls, and Dave Ramsey Financial Coaching.
I have 4 children, 3 that live here in Eagle, 9 grandchildren, and 1 great-grandson, who all reside in Eagle! I get volunteered for many activities involving the children at school and out of school. I'm also active in my church, Eagle United Methodist Church. I enjoy all the drama that comes with a large family!


Eagle Vision meeting is November 14th at 7 pm in the Bailey's Local basement.

Eagle PTE (Parent's and Teacher's of Eagle) meetings are held the 3rd Thursday of
every month at 7 pmin the school library. Childcare is provided.

Seeking Applicants for the Eagle Parks & Recreation Commission

The Village of Eagle is currently seeking applicants for appointment to the Parks & Recreation Commission.

INGREDIENTS:
1 Tablespoon of Extra Virgin Olive Oil
2 Tablespoons of chopped garlic cloves
1 lb ground Turkey Breast
2 tablespoons of The Ultimate Chili Seasoning (recipe below)
or use a premade mix from store
1 cup chopped celery
½ cup chopped red pepper
½ cup chopped orange pepper
2 cups chopped green pepper
1 cup chopped white onion
1 cup sliced mushrooms
½ cup of tomato puree (from the can)
1 14.5 oz can of diced tomatoes
1 15 oz can of tomato sauce
1 15oz can black beans, drained and rinsed
INSTRUCTIONS:
Heat oil and garlic over medium high heat. Add ground turkey and lower heat to medium low until fully cooked. Sprinkle 1 tablespoon of The Ultimate Chili Seasoning over meat and mix together. Add celery, red pepper, orange pepper, green pepper, white onion, sliced mushrooms, sprinkle 1 tablespoon of The Ultimate Chili Seasoning and mix well. Add tomato puree, diced tomatoes, tomato sauce and black beans and gently mix together. Cover and simmer chili for at least an hour (you can cook over several hours on low in a crock pot if you like, but beware that cooking it too long will continue to soften the veggies and beans down). You will notice a very thick chili at the beginning, as the vegetables start to brew they release water and it thins it down. We like our chili chunky, but it’s easy to thin it down with a little water if you want a different consistency. Enjoy!

I have really enjoyed bringing the Friends of Eagle Nebraska Newsletter to you each week over the last 6.5 years. Hopefully, you haven't minded too much hearing my rants about volunteering in our amazing community or supporting small business whenever possible. I've grown from a new mom of two to now having a 4th and 1st grader. I know they say the days go slow but the years go fast. That is so true. Where has the time gone?!?!? Now that my boys are older and we are juggling crazy activities and schedules, I will be stepping down as Editor of this newsletter. My priority needs to be my family. I am sure you understand.
We are currently looking for someone that loves this town as much as I do that would like to carry on this tradition. If you or someone you know may be interested please reach out to John Harrington at John@wirebuilt.com.
